Raw Courgette HumusThis is a gorgeous, simple and easy recipe that I was given at a raw food workshop by Cath Parker, she runs raw food workshops in north London that are both affordable and great fun if you are interested in raw food!
3 Tablespoons Lemon Juice
1Tablespoons Flax/olive or hemp oil
1-2 garlic cloves (you can take the middle green section out if you get digetsive issues around garlic)
1/2 teaspoon paprika
1 teaspoon celtic sea salt
1 teaspoon cumin
Tiny pinch cayenne (optional)
2 Tablespoons raw tahini or 3/4 cup sesame seeds that have been ground in a coffee grinder
Chop the courgette and put it in the blender with all the ingredients.
If your blender isn"t a high powered one, blend the courgette and lemon first to get a liquid going and then add all the other bits - otherwise it may get stuck!
If you have a vitamix or equivalent then its fine to just whack it all in!
Yummy indeed........Amazing green colour too!
