Raw Chocolate Truffles Recipe

Raw Chocolate Truffles

These Raw Chocolate Truffles are probably one of the easiest and most elegant of raw chocolates I have made and tasted - Thank you Miss Cath Parker!

Make sure you don't eat too many too quickly as you will be buzzing around like a raw chocolate bunny for hours!
1/2 cup Coconut oil (when melted)
1 Cup Cacao nibs ground
1/4 Cup Cacao Powder
1/2 Cup Mesquite or Lucuma (I always use mesquite)
2 Tablespoons Agave Nectar
1 tablespoon Vanilla Extract - organic!
Pinch of Himalayan sea salt

Melt the coconut butter slowly at a very low temperature
Mix together all the other ingredients and then stir in the coconut, agave and vanilla!
Try really hard NOT to lick the spoon constantly when you are mixing this - its like deep chocolate delight :)
This will be kind of thick and totally edible - but hold back and press into little ice cube trays (love hearts are best) and put in the fridge for a couple of hours until they have set.

Then kick back and indulge with a nice cup of quality green tea and a best mate (if you want to share them that is!)
